  • 1 lb ground lamb
  • 0.5 medium onion finely grated
  • 0.25 cup fresh parsley finely chopped
  • 2 tbsp fresh mint finely chopped
  • 2 garlic cloves minced
  • 1 tsp cumin
  • 1 tsp coriander
  • 0.5 tsp paprika
  • 0.25 tsp cayenne pepper optional
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions
 

Preparation

  • In a large bowl, combine the ground lamb, grated onion, chopped parsley, chopped mint, minced garlic, cumin, coriander, paprika, cayenne pepper (if using), salt, and black pepper.
  • Mix all ingredients thoroughly with your hands until well combined and slightly sticky.

Forming the Kebabs

  • Divide the meat mixture into 8-12 equal portions.
  • Shape each portion around a skewer, forming an elongated oval shape about 4-5 inches long.

Cooking

  • Heat a grill or a large skillet over medium-high heat.
  • Grill or pan-fry the kebabs for 3-4 minutes per side, or until browned and cooked through.

Serving

  • Serve the kofta kebabs hot with pita bread, yogurt sauce, and a fresh salad, if desired.

Notes

For extra flavor, you can let the meat mixture marinate in the refrigerator for at least 30 minutes before shaping and cooking. If using wooden skewers, remember to soak them in water for at least 30 minutes to prevent burning.
