  • 1 lb Italian sausage
  • 6 cups Chicken broth
  • 1 can (14.5 oz) Diced tomatoes
  • 1 cup Small pasta
  • 1 medium, chopped Onion
  • 2 cloves, minced Garlic
  • 2 cups, fresh Spinach

Seasoning

  • 1 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tsp Dried oregano

Preparation

  • In a large pot, heat olive oil over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  • Add minced garlic and cook for another minute until fragrant. Add Italian sausage, breaking it up with a spoon, and cook until browned, about 8-10 minutes.

Cooking

  • Drain any excess grease from the pot. Pour in chicken broth, diced tomatoes, salt, pepper, and oregano.
  • Bring the soup to a boil, then reduce heat and simmer for 15 minutes. Stir in the small pasta and cook according to package directions until al dente, about 7-10 minutes.
  • Finally, stir in the fresh spinach and cook until wilted, about 2-3 minutes. Serve hot and enjoy!

Notes

For extra flavor, you can add a bay leaf while simmering and remove before serving. A sprinkle of grated Parmesan cheese makes a great topping!
