  • 6 slices Swiss cheese slices
  • 1/2 cup sauerkraut well-drained
  • 12 wonton wrappers
  • 1 large egg
  • 1 tablespoon water
  • 2 cups vegetable oil for frying

Preparation

  • Prepare the egg wash by whisking the egg and water in a small bowl.
  • Lay out one wonton wrapper and place a slice of corned beef, a slice of Swiss cheese, and a tablespoon of sauerkraut in the center.
  • Fold the bottom corner of the wrapper over the filling, then fold in the sides.
  • Brush the top corner with egg wash and roll tightly to form a compact roll-up, ensuring the edges are sealed.
  • Repeat this process for the remaining wrappers and filling.

Cooking

  • Heat vegetable oil in a large skillet or deep pot over medium-high heat until it reaches 350°F (175°C).
  • Carefully place a few roll-ups into the hot oil, ensuring not to overcrowd the pan.
  • Fry for 2-3 minutes on each side until golden brown and crispy.
  • Remove the roll-ups from the oil and place them on a paper towel-lined plate to drain excess oil.

Serving

  • Serve the Crispy Reuben Roll-Ups immediately with your favorite dipping sauce, such as Thousand Island dressing.

Notes

For extra crispiness, ensure the oil is at the correct temperature before frying. Do not overcrowd the pan to maintain even cooking and temperature. These roll-ups are best enjoyed fresh.
