Ingredients
  

Pasta

  • 12 ounces pasta

Sauce

  • 1 pound Italian sausage
  • 2 sweet bell peppers any color, thinly sliced
  • 1 onion chopped
  • 2 garlic cloves minced
  • 14.5 ounces canned diced tomatoes
  • 0.5 cup chicken broth
  • 1 teaspoon dried oregano
  • salt to taste
  • black pepper to taste

Garnish

  • Parmesan cheese for serving

  • 1 tablespoon olive oil

Instructions
 

Cooking Pasta

  • Cook pasta according to package directions, then drain and set aside.
  • While pasta cooks, brown Italian sausage in a large skillet over medium-high heat, breaking it up with a spoon.

Cooking Sauce

  • Drain excess grease from the skillet, then add olive oil, bell peppers, and onion to the skillet.
  • Sauté until vegetables are tender, about 5 minutes, then stir in minced garlic and cook for another minute.
  • Add diced tomatoes, chicken broth, and oregano to the skillet, bring to a simmer, then reduce heat and cook for 5-7 minutes.
  • Stir in the cooked pasta and sausage, then season with salt and pepper to taste.

Serving

  • Serve immediately, garnished with Parmesan cheese.

Notes

For a spicier kick, use hot Italian sausage or add a pinch of red pepper flakes. You can also add other vegetables like spinach or mushrooms.
