  • 2 medium chicken breast
  • 500 g gnocchi
  • 700 ml chicken broth
  • 200 ml heavy cream
  • 100 g spinach
  • 50 g Parmesan cheese grated
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp olive oil

  • Slice the chicken breast into bite-sized pieces and season with garlic powder, onion powder, salt, and pepper.
  • Heat olive oil in a large pot or Dutch oven over medium-high heat, then add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes.
  • Pour in the chicken broth and bring to a simmer, scraping any browned bits from the bottom of the pot.
  • Add the gnocchi to the simmering broth and cook according to package directions, usually 2-3 minutes, until they float to the surface.
  • Stir in the heavy cream, spinach, and grated Parmesan cheese, cooking until the spinach wilts and the sauce thickens slightly.
  • Serve immediately, garnished with extra Parmesan cheese if desired.

Notes

For extra flavor, you can add canned diced tomatoes or sun-dried tomatoes along with the chicken broth. Fresh herbs like basil or parsley would also make a great garnish. Feel free to adjust the seasoning to your taste or add a pinch of red pepper flakes for a bit of heat.
