  • 3 tbsp lime juice
  • 2 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • 0.5 tsp grated fresh ginger
  • 0.25 tsp garlic powder
  • 0.25 tsp red pepper flakes (optional)
  • 3 tbsp water or more, for thinning

For the Wraps

  • 2 cups cooked chicken, shredded or diced
  • 1 red bell pepper, thinly sliced
  • 1 cup carrots, julienne or grated
  • 0.5 cup cucumber, thinly sliced
  • 0.25 cup green onions, sliced
  • 0.25 cup fresh cilantro, chopped
  • 4 large whole wheat tortillas or lettuce wraps

For Serving (Optional)

Instructions
 

Make the Peanut Sauce

  • In a medium bowl, whisk together all peanut sauce ingredients until smooth, adding more water if needed to reach desired consistency.

Prepare the Wraps

  • In a large bowl, combine the cooked chicken, red bell pepper, carrots, cucumber, green onions, and cilantro.

Assemble the Wraps

  • Spread a generous amount of peanut sauce on each tortilla or lettuce wrap, then fill with the chicken and vegetable mixture and roll it up tightly.

Serve

  • Serve immediately, garnished with chopped peanuts and lime wedges if desired.
