Rhubarb Crumble in 30 Minutes

  • Preheat your oven to 375°F (190°C) and lightly grease an 8x8 inch baking dish.
  • In a bowl, combine the chopped rhubarb with sugar and all-purpose flour, then gently toss to coat the rhubarb evenly.
  • Spread the rhubarb mixture into the prepared baking dish.
  • In a separate small bowl, mix together the oats, brown sugar, melted butter, and cinnamon.
  • Sprinkle this crumble topping evenly over the rhubarb mixture.
  • Bake for 15-20 minutes, or until the rhubarb is tender and the topping is golden brown.

Quick Rhubarb Tartlets (using pre-made crust)

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Roll out the pre-made pie crust and cut it into four equal squares.
  • In a bowl, combine the chopped rhubarb with sugar and all-purpose flour.
  • Place a spoonful of the rhubarb mixture in the center of each pie crust square, leaving a border around the edges.
  • Fold the edges of the pie crust over the rhubarb mixture to create a rustic tartlet.
  • Brush the pastry edges with an egg wash for a golden finish.
