Dredging

  • 2 cups all-purpose flour

  • 1 teaspoon salt
  • 1 teaspoon black pepper

Marinating the Chicken

  • In a large bowl, whisk together the buttermilk, hot sauce, salt, and pepper; add the chicken pieces, ensuring they are fully coated.
  • Cover the bowl and refrigerate for at least 30 minutes, or for a more tender and flavorful chicken, refrigerate for up to 4 hours.

Preparing the Dredging Mixture

  • In another large bowl, combine the flour, cornstarch, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper; mix well.

Dredging and Frying

  • Heat vegetable oil in a large deep skillet or Dutch oven to 350°F (175°C).
  • Remove chicken pieces from the buttermilk, letting any excess drip off, then dredge each piece generously in the flour mixture, pressing to coat thoroughly.
  • Carefully place chicken pieces into the hot oil, ensuring not to overcrowd the pan, and fry for 6-8 minutes per side, or until golden brown and cooked through (internal temperature 165°F/74°C).
  • Remove fried chicken with tongs and place on a wire rack set over a paper towel-lined baking sheet to drain excess oil, and let it rest for a few minutes before serving.
