For the Mascarpone Cream

  • 6 large egg yolks
  • 3/4 cup granulated sugar
  • 16 oz mascarpone cheese room temperature

For the Coffee and Assembly

  • 2 cups strong brewed coffee cooled
  • 24 ladyfingers
  • cocoa powder for dusting
  • 2 tbsp rum or espresso liqueur optional

Instructions
 

Mascarpone Cream

  • Whisk egg yolks and sugar in a heatproof bowl over simmering water until pale and thick, reaching 160°F (71°C) to temper the eggs.
  • Remove from heat and continue whisking until cooled, then gently fold in the mascarpone cheese until smooth and combined.

Assembly

  • If using, mix rum or liqueur into the cooled coffee; quickly dip each ladyfinger into the coffee mixture, ensuring it's moist but not soggy.
  • Arrange a single layer of coffee-dipped ladyfingers at the bottom of a 9x13 inch baking dish, then spread half of the mascarpone cream evenly over the ladyfingers.
  • Repeat with another layer of dipped ladyfingers and the remaining mascarpone cream, then cover and refrigerate for at least 3-4 hours, or preferably overnight, to allow flavors to meld and the dessert to set.

Serving

  • Before serving, dust the top generously with cocoa powder, then slice and serve chilled for the best experience.

Notes

For an extra rich flavor, use high-quality espresso. Adjust sweetness to your preference. This recipe can be made a day ahead for optimal flavor development.
