  • 2 large Eggs
  • 1 medium Onion
  • 2 cloves Garlic cloves
  • 1 medium Bell pepper
  • 2 tbsp Olive oil
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 0.5 tsp Chili powder
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Fresh parsley chopped for garnish

Step-by-step

  • Sauté the chopped onion, garlic, and bell pepper in olive oil in a large skillet until softened, about 5-7 minutes.
  • Stir in the cumin, paprika, chili powder, salt, and black pepper, cooking for one minute until fragrant.
  • Pour in the crushed tomatoes and simmer for 10-15 minutes, allowing the sauce to thicken slightly.
  • Make two indentations in the sauce and carefully crack an egg into each indentation; cover and cook for 5-8 minutes until the egg whites are set and yolks are still runny.
  • Garnish with fresh parsley and serve immediately, perhaps with warm pita bread or crusty bread.

Notes

For extra flavor, add a pinch of red pepper flakes with the spices. You can also customize by adding spinach or feta cheese.
