  • 2 lbs ripe tomatoes
  • 1 cup fresh basil leaves
  • 2 tbsp unsalted butter
  • 1 yellow onion chopped
  • 3 garlic cloves minced
  • 4 cups vegetable broth
  • 0.5 cup heavy cream
  • 1 tsp sugar

Preparation

  • Wash and chop the ripe tomatoes, then set them aside.
  • Roughly chop the fresh basil leaves, reserving a few for garnish.

Cooking

  • Melt the butter in a large pot over medium heat, then sauté the chopped onion until softened, about 5 minutes.
  • Add the minced garlic and cook for an additional minute until fragrant.
  • Stir in the chopped tomatoes, vegetable broth, and sugar, bringing the mixture to a simmer.
  • Reduce heat to low, cover, and let it cook for 30 minutes, allowing the flavors to meld.
  • Remove the pot from heat and carefully blend the soup until smooth using an immersion blender or by transferring it to a regular blender.
  • Stir in the heavy cream and chopped basil, then season with salt and pepper to taste.
  • Heat gently for a few more minutes, ensuring not to boil.

Serving

  • Ladle the hot soup into bowls and garnish with reserved fresh basil leaves.
  • Serve immediately with crusty bread or grilled cheese sandwiches.

Notes

For an extra depth of flavor, roast the tomatoes in the oven before adding them to the soup. You can also adjust the amount of cream to your preference for a richer or lighter soup. Add a pinch of red pepper flakes for a subtle kick.
