Ingredients
  

Noodles

  • 8 ounces udon noodles

Vegetables

  • 1 cucumber julienned
  • 2 carrots julienned

Dressing

  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey

Preparation

  • Cook the udon noodles according to package directions, then drain and rinse them with cold water.

Assembly

  • In a large bowl, combine the cooked noodles, julienned cucumber, and julienned carrots.
  • Whisk together the soy sauce, rice vinegar, sesame oil, and honey in a small bowl to create the dressing.
  • Pour the dressing over the noodle mixture and toss until all ingredients are well combined.

Serving

  • Serve the cold noodle salad immediately, or chill it in the refrigerator for at least 30 minutes for enhanced flavor.

Notes

For extra protein, consider adding grilled chicken or tofu. A sprinkle of toasted sesame seeds can add a nice crunch.
