  • 6 cups Mixed greens
  • 1 lb Cooked shrimp peeled and deveined
  • 1/2 cup Dried cranberries
  • 1/4 cup Toasted pecans chopped
  • 1/2 cup Crumbled feta cheese

Lemon-Dill Vinaigrette

  • 1/4 cup Olive oil
  • 2 tbsp Fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tbsp Fresh dill chopped
  • Salt to taste
  • Black pepper to taste

Preparation

  • In a small bowl, combine olive oil, lemon juice, Dijon mustard, fresh dill, salt, and pepper. Whisk these ingredients until they are well emulsified to create the vinaigrette, then set it aside.
  • In a large salad bowl, gently combine the mixed greens, cooked shrimp, dried cranberries, toasted pecans, and crumbled feta cheese.
  • Pour the prepared lemon-dill vinaigrette over the salad mixture. Toss the ingredients gently to ensure everything is evenly coated with the dressing, and serve immediately.

Notes
