  • 1 lb Ground Beef
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 packet Taco Seasoning
  • 0.5 cup Water

For the Enchiladas

  • 12 Corn Tortillas
  • 2 cans Enchilada Sauce 10 oz each
  • 2 cups Shredded Cheese Cheddar or Mexican blend
  • 2 tbsp Vegetable Oil

For Garnish (Optional)

  • Sour Cream
  • Fresh Cilantro chopped
  • Diced Avocado

Prepare the Beef Filling

  • Brown ground beef in a large skillet, then drain any excess fat. Stir in chopped onion and minced garlic, cooking until softened.
  • Add taco seasoning and water to the skillet, simmering until the liquid is absorbed and the beef is well-seasoned. Set aside.

Assemble the Enchiladas

  • Preheat oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish. Warm corn tortillas in a separate pan with vegetable oil for a few seconds on each side to make them pliable.
  • Dip each warmed tortilla in enchilada sauce to lightly coat. Fill the center with beef mixture and a sprinkle of cheese, then roll tightly and place seam-side down in the prepared baking dish.
  • Once all enchiladas are arranged, pour remaining enchilada sauce evenly over them and top generously with more shredded cheese.

Bake and Serve

  • Bake for 20-25 minutes, or until the cheese is melted and bubbly. Let the enchiladas rest for a few minutes before serving.
  • Garnish with sour cream, fresh cilantro, or diced avocado if desired, then serve warm.

Notes

For an extra kick, add diced jalapeños to the beef filling. You can also experiment with different types of cheese for varied flavors.
