  • 2 large chicken breasts boneless, skinless
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1/2 cup sun-dried tomatoes chopped
  • 1.5 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese grated
  • 2 cups spinach fresh
  • 8 oz pasta fettuccine or similar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes optional

Cooking Steps

  • Season chicken breasts with salt, pepper, and red pepper flakes, then cook in olive oil until golden and cooked through. Remove chicken and set aside.
  • Add minced garlic and chopped sun-dried tomatoes to the pan and sauté until fragrant, about 1-2 minutes.
  • Pour in chicken broth and heavy cream, scraping up any browned bits from the bottom of the pan, and bring to a simmer.
  • Stir in grated Parmesan cheese until melted and the sauce thickens, then add fresh spinach and cook until wilted.
  • Slice the cooked chicken into strips, then return to the pan with the sauce.
  • Cook pasta according to package directions, then drain and add directly to the sauce, tossing to combine.
  • Serve immediately, garnished with extra Parmesan and fresh parsley if desired.

Notes

For extra flavor, marinate the chicken for at least 30 minutes before cooking. You can also add other vegetables like mushrooms or bell peppers.
