Chili

  • 2 lbs beef chuck roast cut into 1/2-inch cubes
  • 2 tbsp bacon fat
  • 1 large yellow onion chopped
  • 4 cloves garlic minced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 3 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp smoked paprika
  • 1 tsp cayenne pepper optional
  • 2 tbsp masa harina
  • 1 tsp salt
  • 1/2 tsp black pepper

  • Season beef with salt and pepper, then brown in rendered bacon fat in a large Dutch oven until well-browned on all sides; remove and set aside.
  • Sauté chopped onion in the same pot until softened, then add minced garlic and cook for another minute until fragrant.
  • Stir in chili powder, cumin, smoked paprika, and cayenne pepper, cooking for one minute until aromatic, then add tomato paste and beef broth, bringing the mixture to a simmer.
  • Return the beef to the pot, reduce heat to low, cover, and simmer for 2-3 hours, or until the beef is very tender.
  • Remove the lid, stir in the masa harina to thicken the chili, and cook for an additional 15-20 minutes, or until the desired consistency is reached.

Notes

For an extra layer of flavor, consider browning the beef in small batches to avoid overcrowding the pot, ensuring a good sear. Adjust the amount of cayenne pepper to your preferred spice level. Serve with your favorite toppings like shredded cheese, sour cream, or fresh cilantro.
