  • 2 tbsp Olive oil
  • 1 small Onion finely chopped
  • 1 Green bell pepper diced
  • 3 medium Tomatoes ripe, chopped
  • 4 large Eggs
  • Salt to taste
  • Black pepper to taste
  • 1 tsp Paprika optional
  • 2 tbsp Fresh parsley chopped, for garnish

Preparation & Cooking

  • Heat olive oil in a skillet over medium heat; then add chopped onion and bell pepper and sauté for 5-7 minutes until softened.
  • Stir in the chopped tomatoes, salt, black pepper, and paprika. Simmer for 10-15 minutes until the tomatoes break down and the sauce thickens.
  • Create four small wells in the tomato mixture and crack an egg into each. Cover and cook for 5-7 minutes, or until the whites are set and yolks reach your desired doneness.
  • Garnish with fresh chopped parsley and serve immediately with crusty bread.

Notes

For best results, use fresh, ripe tomatoes and good quality olive oil. Adjust the spice levels to your preference.
