  • 1 cup dried chickpeas
  • 1/2 medium onion, chopped
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/4 teaspoon cayenne pepper (optional)
  • vegetable oil, for frying as needed

Preparation

  • Soak the dried chickpeas in water overnight, then drain and rinse them thoroughly and ensure they are dry.

Mixing

  • In a food processor, combine the soaked chickpeas, onion, parsley, cilantro, garlic, flour, baking powder, salt, cumin, coriander, and cayenne pepper, blending until a coarse mixture forms, scraping down the sides as needed.

Frying

  • Heat about 2-3 inches of vegetable oil in a deep pot or skillet to 350°F (175°C), then carefully form the falafel mixture into small patties or balls and fry in batches for 3-5 minutes per side until golden brown and cooked through.

Notes

For extra flavor, you can add a pinch of sumac or a squeeze of lemon juice to the falafel mixture. Serve hot with tahini sauce, pita bread, and fresh vegetables.
