  • 1/2 tsp salt

  • 1 cup cherry tomatoes, halved

  • 2 tbsp fresh parsley, chopped

Preparation

  • Prepare the chicken by cutting boneless, skinless chicken breasts into 1-inch pieces, ensuring even cooking.
  • In a bowl, combine lemon juice, olive oil, minced garlic, dried oregano, dried thyme, salt, and black pepper for the marinade.
  • Add the chicken pieces to the marinade, ensuring they are well coated, then refrigerate for at least 30 minutes, or preferably longer, to infuse flavors.

Cooking

  • Preheat oven to 400°F (200°C) and lightly grease a baking sheet to prevent sticking.
  • Arrange the marinated chicken on the prepared baking sheet in a single layer for even cooking.
  • Bake the chicken for 15-20 minutes, or until cooked through, ensuring internal temperature reaches 165°F (74°C).
