Ingredients
  

Pasta Salad

  • 2 cups pasta cooked and cooled (e.g., rotini, penne)
  • 1 cup cherry tomatoes halved
  • 1/2 cup cucumber diced
  • 1/2 cup bell pepper diced (any color)
  • 1/2 cup cheddar cheese cubed or shredded

Dressing

  • 2 tbsp olive oil
  • 1 tbsp lemon juice freshly squeezed

Instructions
 

Prepare the Pasta

  • Cook the pasta according to package directions, then drain it and rinse with cold water to cool it down quickly.
  • Once cooled, transfer the pasta to a large mixing bowl.

Chop Vegetables and Cheese

  • Halve the cherry tomatoes, dice the cucumber, and dice the bell pepper, then add them to the mixing bowl with the pasta.
  • Add the cubed or shredded cheddar cheese to the bowl.

Make the Dressing

  • In a small bowl, whisk together the olive oil and fresh lemon juice until well combined.

Assemble the Salad

  • Pour the dressing over the pasta, vegetables, and cheese in the large mixing bowl.
  • Toss all the ingredients gently until everything is evenly coated with the dressing.
  • Divide the pasta salad into individual lunchboxes or an airtight container and refrigerate until ready to serve.

Notes

You can customize this salad with your child's favorite vegetables like grated carrots, peas, or corn. For added protein, consider adding cooked chicken, chickpeas, or hard-boiled eggs. This salad can be prepared a day in advance and stored in the refrigerator. If packing for lunch, consider adding a small ice pack to keep it cool.
