Marinade

  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch cubes
  • 0.25 cup lemon juice
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 2 cloves garlic, minced
  • 0.5 tsp salt
  • 0.25 tsp black pepper

For Serving

  • Pita bread
  • Tzatziki sauce
  • Chopped tomatoes and cucumbers

Preparation

  • In a medium bowl, combine the lemon juice, olive oil, oregano, minced garlic, salt, and black pepper to create the marinade.
  • Add the cubed chicken breasts to the marinade and toss to ensure all pieces are well coated.
  • Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, allowing the flavors to meld and tenderize the chicken.

Cooking

  • If using wooden skewers, soak them in water for at least 20 minutes to prevent burning during grilling.
  • Preheat your grill to medium-high heat.
  • Thread the marinated chicken pieces onto the skewers, leaving a small space between each piece.
  • Place the chicken skewers on the preheated grill and cook for 3-4 minutes per side, or until the chicken is cooked through and has nice grill marks.

Serving

  • Remove the skewers from the grill and let them rest for a few minutes.
  • Serve the chicken souvlaki hot with pita bread, tzatziki sauce, and a fresh salad of chopped tomatoes and cucumbers.

Notes

For extra flavor, you can add a pinch of red pepper flakes to the marinade. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
