  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh parsley, chopped
  • 1/4 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 oz spaghetti or linguine

Preparation

  • Pat the shrimp dry with paper towels and season with salt and pepper.
  • Cook pasta according to package directions until al dente; drain and set aside, reserving 1/2 cup of pasta water.

Cooking Scampi

  • Melt butter in a large skillet over medium heat, then add minced garlic and red pepper flakes, cooking until fragrant (about 1 minute).
  • Add shrimp to the skillet and cook for 2-3 minutes per side until pink and opaque.
  • Pour in white wine and lemon juice, bringing the mixture to a simmer.
  • Add cooked pasta to the skillet, tossing to coat with the sauce; if needed, add a splash of reserved pasta water to reach desired consistency.
  • Stir in fresh parsley and serve immediately.

Notes

For extra flavor, you can marinate the shrimp in a little olive oil and garlic for 15 minutes before cooking.
