  • In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, and salt; set aside.
  • In a large bowl, beat the eggs and granulated sugar until light and fluffy.
  • Stir in the pumpkin puree and vegetable oil until combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined and no lumps remain.
  • Pour the batter into the prepared baking pan and spread evenly.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the pumpkin bars cool completely in the pan on a wire rack before frosting.

Cream Cheese Frosting Instructions

  • In a medium bowl, beat the softened cream cheese and butter until smooth and creamy.
  • Gradually add the confectioners' sugar, beating until well combined.
  • Stir in the vanilla extract.
  • Once the pumpkin bars are completely cool, spread the cream cheese frosting evenly over them.

Notes
