Proven way to grow a perfect Shepherd's Pie

Ingredients
  

For the Mashed Potatoes

  • 2 lbs potatoes, peeled and quartered
  • 4 tbsp butter
  • 0.5 cup milk
  • 1 tsp salt to taste
  • 0.5 tsp black pepper to taste

For the Lamb Filling

  • 1.5 lbs ground lamb
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery stalks, diced
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1.5 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp fresh thyme leaves
  • salt and pepper to taste

Instructions
 

Prepare the Mashed Potatoes

  • Boil the peeled and quartered potatoes in salted water until very tender, then drain thoroughly.
  • Mash the cooked potatoes with butter, milk, salt, and pepper until smooth and creamy, then set aside.

Cook the Lamb Filling

  • Brown the ground lamb in a large oven-safe skillet over medium-high heat, then drain any excess fat and set the lamb aside.
  • Sauté the chopped onion, diced carrots, and diced celery in the same skillet until softened, then add minced garlic and cook for another minute until fragrant.
  • Stir in the tomato paste and cook for 2 minutes, then deglaze the pan with beef broth and add Worcestershire sauce and fresh thyme.
  • Return the lamb to the skillet, bring the mixture to a simmer, then reduce heat and cook for 10-15 minutes until slightly thickened.

Assemble and Bake the Shepherd's Pie

  • Preheat your oven to 375°F (190°C), then spread the lamb filling evenly in the bottom of an oven-safe dish.
  • Top the filling with the prepared mashed potatoes, spreading them to the edges and creating peaks with a fork.
  • Bake for 25-30 minutes, or until the filling is bubbly and the mashed potato topping is golden brown and slightly crispy.

Notes

For an extra golden-brown crust, you can sprinkle a little paprika or grated cheese over the mashed potatoes before baking. Allow the pie to rest for 10 minutes after baking to help the filling set.
