Ingredients
  

Grain Bowl

  • 1 cup cooked quinoa or rice
  • 2 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 0.5 cup cucumber, diced
  • 0.5 avocado, sliced
  • 0.25 cup feta cheese, crumbled optional

Lemon Vinaigrette

  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 0.5 tsp honey or maple syrup
  • 0.25 tsp salt
  • 0.125 tsp black pepper

Instructions
 

Prepare the Grains

  • If not already cooked, prepare your quinoa or rice according to package instructions.

Assemble the Bowls

  • Divide the cooked grains, mixed greens, cherry tomatoes, diced cucumber, and sliced avocado evenly between two bowls.

Make the Vinaigrette

  • In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey or maple syrup, salt, and black pepper until well combined.

Dress and Serve

  • Drizzle the lemon vinaigrette over each grain bowl and gently toss to combine. Sprinkle with crumbled feta cheese, if desired, and serve immediately.
