  • 4 chicken breasts sliced into strips
  • 3 bell peppers mixed colors, sliced
  • 1 red onion sliced
  • 2 tbsp olive oil
  • 2 tbsp fajita seasoning mix

  • sour cream for serving
  • 1 lime cut into wedges

Preparation

  • Slice the chicken breasts, bell peppers, and red onion into uniform strips.

Cooking

  • Heat one tablespoon of olive oil in a large skillet over medium-high heat, then add the chicken strips and sprinkle with half of the fajita seasoning; cook until browned and cooked through, about 5-7 minutes, then remove from the skillet.
  • Add the remaining olive oil and the sliced bell peppers and onion to the same skillet, sprinkle with the rest of the fajita seasoning, and cook until the vegetables are tender-crisp, approximately 5-8 minutes.
  • Return the cooked chicken to the skillet with the vegetables and toss everything together to combine and heat through.

Assembly

  • Warm the flour tortillas according to package directions, then serve the chicken and vegetable mixture in the warm tortillas with salsa, sour cream, and fresh lime wedges.

Notes

For extra flavor, marinate the chicken in a little lime juice and fajita seasoning for at least 30 minutes before cooking.
