  • 2 cups masa harina
  • 1.5 cups warm water or broth
  • 1/2 cup lard or vegetable shortening
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 10 corn husks

Filling

  • 1 lb pork shoulder cooked and shredded
  • 1 cup red chili sauce
  • 1/2 cup chicken broth

  • Soak corn husks in warm water for at least 30 minutes until pliable, then drain and set aside.
  • In a large bowl, combine masa harina, baking powder, and salt; in another bowl, beat lard until fluffy.
  • Gradually add masa mixture to lard, alternating with warm water or broth, beating until a soft dough forms.
  • For the filling, mix cooked shredded pork with red chili sauce and chicken broth.
  • Spread 2 tablespoons of masa dough thinly over the wide end of each corn husk, leaving space at the top.
  • Place 1-2 tablespoons of filling in the center of the masa, then fold the sides of the corn husk over the filling, and fold up the bottom.
  • Arrange tamales vertically in a steamer basket with the open ends facing up, ensuring they are not tightly packed.
  • Steam tamales for 45-60 minutes, or until the masa easily separates from the corn husks.

Notes

For extra flavor, use a homemade red chili sauce. You can also experiment with different fillings like chicken or vegetables.
