  • 5 medium sweet potatoes
  • 1 medium onion
  • 2 garlic cloves
  • 4 cups vegetable broth
  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon ginger freshly grated (optional)

  • Peel and dice the sweet potatoes, chop the onion, and mince the garlic.
  • Heat olive oil in a large pot over medium heat, then sauté the onion until softened.
  • Add garlic and ginger (if using) and cook for another minute until fragrant.
  • Stir in the diced sweet potatoes, vegetable broth, salt, and pepper, then bring to a boil.
  • Reduce heat, cover, and simmer for 15-20 minutes until sweet potatoes are very tender.
  • Carefully transfer the soup to a blender or use an immersion blender to blend until smooth. Alternatively, you can mash the sweet potatoes in the pot and stir well for a chunkier soup.
  • Stir in the coconut milk and heat through for a few minutes without boiling.
  • Taste and adjust seasonings as needed, then serve hot.

Notes

For extra flavor, roast the sweet potatoes before adding them to the soup. Garnish with fresh cilantro, a swirl of extra coconut milk, or toasted nuts before serving.
