  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable broth
  • 0.5 cup Heavy cream
  • 2 tbsp Olive oil
  • Salt to taste
  • Black pepper to taste

Preparation

  • Heat olive oil in a large pot over medium heat, then add chopped onion and cook until softened, about 5 minutes.
  • Stir in minced garlic and cook for another minute until fragrant, being careful not to burn it.
  • Add the sliced zucchini and vegetable broth to the pot, bring to a boil, then reduce heat and simmer until zucchini is tender, about 15-20 minutes.

Finishing Touches

  • Carefully transfer the soup to a blender and blend until smooth; alternatively, use an immersion blender directly in the pot.
  • Return the blended soup to the pot, stir in heavy cream, and heat gently without boiling.
  • Season with salt and pepper to taste, then serve hot and enjoy your creamy zucchini soup.

Notes

For an extra touch, garnish with fresh herbs like parsley or dill, or a swirl of crème fraîche. You can also roast the zucchini first for a deeper flavor.
