  • 3 cups cooked rice preferably day-old long-grain
  • 2 large eggs
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil
  • 2 garlic minced
  • 1 tsp ginger grated (optional)
  • 0.5 cup carrots diced
  • 0.5 cup frozen peas
  • 2 green onions sliced (white and green parts separated)
  • salt and black pepper to taste

Preparation

  • Whisk the eggs in a small bowl, chop all vegetables, and ensure your day-old cooked rice is separated and free of clumps.

Cooking

  • Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat, then scramble the whisked eggs until just set, remove them from the pan, and set aside.
  • Add the remaining 1 tablespoon of vegetable oil to the hot pan, then add minced garlic, grated ginger (if using), diced carrots, and the white parts of the green onions, stir-frying for about 2-3 minutes until the carrots are slightly tender-crisp.
  • Add the cold, day-old rice to the pan, breaking up any clumps with your spatula, and stir-fry for 3-5 minutes until the rice is heated through and slightly toasted.
  • Return the scrambled eggs to the pan, add the frozen peas, soy sauce, and sesame oil, stirring everything together for another 1-2 minutes until thoroughly combined and heated.
  • Season the fried rice with salt and black pepper to taste, then remove from heat, garnish with the green parts of the sliced green onions, and serve immediately.

Notes

Using day-old, chilled rice is crucial for the best fried rice texture, preventing it from getting mushy. Feel free to add cooked chicken, shrimp, or tofu for a more substantial meal.
