  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1.5 pounds large shrimp, peeled and deveined
  • 0.5 cup dry white wine or chicken broth
  • 2 tablespoons lemon juice
  • 0.5 teaspoon red pepper flakes
  • 0.25 cup fresh parsley, chopped
  • 0.5 cup Parmesan cheese, grated
  • 1 cup mozzarella cheese, shredded
  • salt and black pepper to taste

  • 0.5 cup Panko breadcrumbs
  • 1 tablespoon olive oil

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and grab a 9x13 inch baking dish.
  • Cook the linguine according to package directions until al dente; drain and set aside.
  • In a large skillet, melt butter over medium heat, then add minced garlic and cook for 1 minute until fragrant.

Cooking the Scampi

  • Add shrimp to the skillet and cook for 2-3 minutes per side until pink and opaque; remove shrimp and set aside.
  • Pour white wine (or broth) and lemon juice into the same skillet, scraping up any browned bits; stir in red pepper flakes.
  • Add the cooked linguine back to the skillet, along with the cooked shrimp, fresh parsley, Parmesan cheese, and salt and pepper; toss until everything is well combined.

Baking

  • Transfer the pasta mixture to the prepared baking dish and sprinkle with mozzarella cheese.
  • For an optional topping, mix Panko breadcrumbs with olive oil and sprinkle over the mozzarella.
  • Bake for 15-20 minutes, or until the cheese is bubbly and golden brown.

Serving

  • Let the pasta bake rest for a few minutes before serving; garnish with extra fresh parsley if desired.

Notes

For extra flavor, you can marinate the shrimp in a little lemon juice and garlic for 15 minutes before cooking. If you don't have dry white wine, chicken broth is a good substitute. Adjust red pepper flakes to your spice preference. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or microwave.
