  • 1 whole chicken
  • 4 tbsp lemon juice
  • 4 tbsp olive oil
  • 1/2 cup Peri Peri sauce
  • 4 garlic cloves, minced

Spices

  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper

Preparation

  • Butterfly the whole chicken by cutting along the backbone to flatten it, then pat it dry with paper towels.
  • In a bowl, combine lemon juice, olive oil, Peri Peri sauce, minced garlic, paprika, chili powder, dried oregano, salt, and black pepper to create the marinade.

Cooking

  • Place the butterflied chicken in a large dish or zip-top bag, pour the marinade over it, ensuring it's fully coated, and refrigerate for at least 2 hours or overnight.
  • Preheat your grill to medium-high heat or oven to 200°C (400°F).
  • Grill the chicken for 25-30 minutes, flipping occasionally, or bake in the oven until the internal temperature reaches 75°C (165°F).
  • Let the chicken rest for 5-10 minutes before carving and serving.

Notes

For extra flavor, baste the chicken with remaining marinade during the last 10 minutes of cooking. Adjust Peri Peri sauce quantity to your spice preference.
