  • 2 lbs potatoes peeled and cut into 1-inch chunks
  • 1.5 cups cherry tomatoes halved
  • 1 red onion thinly sliced
  • 4 cloves garlic minced
  • 2 tbsp Ras el Hanout
  • 2 tbsp olive oil
  • 1 cup vegetable broth
  • 0.25 cup fresh parsley or cilantro chopped for garnish (optional)
  • salt to taste
  • black pepper to taste

Preparation

  • Heat olive oil in a large tagine or heavy-bottomed pot over medium heat.
  • Add the sliced red onion and cook until softened, about 5-7 minutes.
  • Stir in the minced garlic and cook for another minute until fragrant.
  • Add the potato chunks, cherry tomatoes, and Ras el Hanout to the pot.
  • Pour in the vegetable broth and season with salt and pepper to taste.

Cooking

  • Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes.
  • Cook until potatoes are tender when pierced with a fork.

Serving

  • Garnish with fresh parsley or cilantro, if desired.
  • Serve hot with couscous or crusty bread.

Notes

For extra flavor, you can add a squeeze of lemon juice at the end. Adjust the amount of Ras el Hanout according to your spice preference.
