Ingredients
  

Bowl Ingredients

  • 1 cup Quinoa
  • 1 cup Cherry tomatoes halved
  • 1/2 Cucumber diced
  • 1 Bell pepper sliced
  • 1 can Chickpeas rinsed and drained
  • 1 Avocado sliced
  • 2 cups Fresh spinach

Dressing Ingredients

  • 3 tbsps Olive oil
  • 2 tbsps Lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp Garlic powder
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper

Instructions
 

Preparation

  • Cook quinoa according to package instructions.
  • While quinoa cooks, chop all vegetables as directed.

Assembly

  • In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, garlic powder, salt, and pepper to make the dressing.
  • Divide cooked quinoa among 4 bowls. Top with spinach, cherry tomatoes, cucumber, bell pepper, chickpeas, and avocado.
  • Drizzle each bowl with the prepared dressing just before serving.

Notes

Feel free to customize with your favorite seasonal vegetables or protein. Add grilled chicken or tofu for an extra boost. These bowls are great for meal prep and can be stored in the refrigerator for up to 3 days. Store the dressing separately and add just before serving to prevent the vegetables from getting soggy.
