  • 1 onion chopped

Preparation

  • Peel and finely mince all 5 heads of garlic, and prepare the other vegetables like onion, carrots, and celery by chopping them into small pieces.
  • Rinse and drain the canned cannellini beans thoroughly under cold water.

Cooking the Soup

  • Heat olive oil in a large pot or Dutch oven over medium heat, then add the chopped onion, carrots, and celery and sauté for about 5-7 minutes until they soften.
  • Add the minced garlic to the pot and cook for another 1-2 minutes until fragrant, being careful not to let it brown.
  • Pour in the vegetable broth, add the rinsed cannellini beans, dried thyme, and bay leaf, then bring the mixture to a boil.
  • Reduce the heat to low, cover the pot, and simmer for 30-40 minutes, allowing the flavors to meld together.

Finishing Touches

  • Remove the bay leaf, then taste the soup and season with salt and black pepper as needed.
  • For a creamier texture, you can mash a portion of the beans against the side of the pot with a spoon or use an immersion blender for a few pulses.
  • Ladle the hot soup into bowls and garnish with fresh chopped parsley if desired, serving immediately.
