Ingredients
  

Empanada Dough

  • 5 discs pre-made empanada discs

Chicken Filling

  • 1 cup cooked chicken, shredded
  • 0.25 cup onion, finely chopped
  • 0.25 cup red bell pepper, finely chopped
  • 1 clove garlic, minced
  • 0.5 tsp cumin
  • 0.5 tsp paprika
  • 0.25 tsp salt
  • 0.125 tsp black pepper
  • 1 tbsp olive oil

Egg Wash

  • 1 egg
  • 1 tbsp water

Instructions
 

Prepare the Filling

  • Heat olive oil in a skillet over medium heat, then sauté chopped onion and bell pepper until softened, about 5 minutes.
  • Add minced garlic and cook for another minute until fragrant.
  • Stir in shredded cooked chicken, cumin, paprika, salt, and black pepper; cook for 2-3 minutes, allowing the flavors to meld.
  • Remove the chicken filling from heat and let it cool slightly.

Assemble the Empanadas

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Place a spoonful of the chicken filling in the center of each empanada disc.
  • Fold each disc in half to create a crescent shape and crimp the edges with a fork to seal.
  • In a small bowl, whisk together the egg and water to create an egg wash, then brush it over the sealed empanadas.

Bake the Empanadas

  • Bake the empanadas for 20-25 minutes, or until they are golden brown and puffed.
  • Let them cool for a few minutes before serving, and enjoy your delicious homemade chicken empanadas.

Notes

For extra flavor, you can add a pinch of chili powder to the chicken filling. These empanadas are great for meal prep and can be frozen before or after baking. If freezing before baking, brush with egg wash and bake directly from frozen, adding an extra 5-10 minutes to the cook time.
