  • 5 Wooden skewers or popsicle sticks
  • 1/2 cup Unsalted butter
  • 1 cup Light brown sugar, packed
  • 1/2 cup Heavy cream
  • 1/4 cup Corn syrup
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Salt

Preparation

  • Wash and dry the apples thoroughly, removing any wax by dipping them in boiling water for a few seconds if necessary and then drying well.
  • Insert a skewer or popsicle stick firmly into the stem end of each apple.

Caramel Making

  • In a heavy-bottomed saucepan, melt butter over medium heat, then add brown sugar, heavy cream, corn syrup, and salt, stirring until combined.
  • Bring the mixture to a boil, then reduce heat to medium-low and continue to boil for 10-15 minutes, stirring occasionally, until a candy thermometer reads 245°F (118°C).
  • Remove the saucepan from the heat and stir in the vanilla extract.

Dipping and Cooling

  • Carefully dip each apple into the hot caramel, turning to fully coat, and allow excess caramel to drip off.
  • Place the coated apples on parchment paper or a silicone baking mat to cool completely.

Notes
