  • 4 large eggs, separated
  • 150 g granulated sugar
  • 1 tbsp vanilla extract
  • 125 g unsalted butter, melted
  • 115 g all-purpose flour
  • 500 ml milk, lukewarm
  • as needed powdered sugar, for dusting

  • Preheat your oven to 160°C (325°F) and grease and flour a 20cm (8-inch) round cake pan securely.
  • Separately, beat the egg yolks with sugar until pale, then whisk in vanilla extract and melted butter.
  • Gradually mix in the flour until smooth, then slowly add the lukewarm milk while continuously whisking.
  • In a separate bowl, whip the egg whites until stiff peaks form and gently fold them into the batter.
  • Pour the batter into the prepared cake pan and bake for 60-70 minutes, or until the top is golden and set.
  • Allow the cake to cool completely before chilling it for at least 2 hours, then dust with powdered sugar before serving.

Notes

For best results, make sure all ingredients are at room temperature. The magic custard effect happens as the cake cools, so resist cutting into it too early!
