Ingredients
  

For the Chicken Marinade:

  • 1.5 lbs boneless, skinless chicken thighs
  • 3 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper

For the Tzatziki Sauce:

  • 1 cup plain Greek yogurt
  • 0.5 cup cucumber, grated and squeezed dry
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill, chopped
  • 1 clove garlic, minced
  • 0.25 tsp salt

For the Bowls:

  • 3 cups cooked quinoa or rice
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 0.5 cup red onion, thinly sliced
  • 0.5 cup Kalamata olives, halved
  • 0.5 cup feta cheese, crumbled
  • 2 tbsp fresh parsley, chopped

Instructions
 

Marinating the Chicken

  • Cut chicken thighs into 1-inch pieces and place them in a bowl.
  • Add lemon juice, olive oil, oregano, garlic powder, salt, and pepper to the chicken.
  • Toss to coat evenly and marinate in the refrigerator for at least 20 minutes.

Cooking the Chicken

  • Preheat a large non-stick skillet or grill pan over medium-high heat.
  • Cook the marinated chicken for 5-7 minutes per side, or until cooked through and lightly browned.

Preparing the Tzatziki Sauce

  • In a medium bowl, combine Greek yogurt, grated cucumber, lemon juice, fresh dill, minced garlic, and salt.
  • Stir well to combine and refrigerate until serving.

Assembling the Bowls

  • Divide the cooked quinoa or rice among three meal prep bowls.
  • Top each bowl with cooked chicken, cherry tomatoes, diced cucumber, red onion, Kalamata olives, and crumbled feta cheese.

Notes

For best results, marinate the chicken for at least 30 minutes, or even overnight. You can substitute chicken breast for thighs, but adjust cooking time accordingly.
