Overnight Oats with Stewed Rhubarb & Honey

Ingredients
  

For the Stewed Rhubarb

  • 2 stalks Rhubarb chopped
  • 2 tbsp Water
  • 1 tbsp Honey

For the Overnight Oats

  • 0.5 cup Rolled Oats
  • 0.75 cup Milk (dairy or non-dairy)
  • 1 tbsp Chia Seeds
  • 0.5 tbsp Honey or maple syrup

Instructions
 

Stewed Rhubarb

  • Combine the chopped rhubarb, water, and honey in a small saucepan and bring to a simmer over medium heat.
  • Cook for 10-15 minutes, or until the rhubarb softens and breaks down, then set aside to cool.

Overnight Oats

  • In a jar or container, combine the rolled oats, milk, chia seeds, and honey, then stir well.
  • Cover and refrigerate overnight, or for at least 4 hours, to allow the oats to soften and thicken.

Assembly

  • In the morning, layer the overnight oats with the cooled stewed rhubarb.
  • Serve immediately and enjoy this delicious and nutritious breakfast.

Notes

For extra flavor, add a pinch of cinnamon or vanilla extract to the stewed rhubarb. You can also top with nuts or granola for added crunch.
