Equipment

  • Baking sheet
  • Parchment paper
  • Pastry brush
  • Small bowl
  • Knife

Ingredients

Feta Rolls

  • 200 g Feta cheese block
  • 10 Filo pastry sheets (approx. 20x30 cm each)
  • 2 tbsp Olive oil

Chili Honey

  • 4 tbsp Honey
  • 0.5 tsp Red chili flakes or more, to taste
  • 1 tsp Lemon juice

Garnish

  • Fresh parsley chopped (optional)

Instructions

Preparation

  • Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  • Cut the feta block into 5 equal rectangular portions, approximately 2x2.5x5 cm each.
  • Lay out one sheet of filo pastry on a clean surface and brush it lightly with olive oil. Place a second sheet directly on top and brush with olive oil as well.

Assembling the Rolls

  • Place one feta portion at one end of the double filo sheet.
  • Fold the sides of the filo pastry over the feta, then tightly roll the feta and filo up to form a compact roll.
  • Repeat this process for the remaining feta portions and filo sheets until you have 5 rolls.

Baking

  • Arrange the rolls seam-side down on the prepared baking sheet.
  • Bake for 15-20 minutes, or until the filo pastry is golden brown and crispy.

Chili Honey

  • While the rolls are baking, combine honey, red chili flakes, and lemon juice in a small bowl, mixing well.
  • Once the rolls are baked, remove them from the oven and let them cool for a few minutes.
  • Drizzle the chili honey generously over the warm feta rolls and garnish with fresh parsley, if desired.
  • Serve immediately and enjoy the crispy, savory, and sweet flavors.

Notes

For extra crispiness, you can lightly brush the top of the assembled rolls with a bit more olive oil before baking. Adjust chili flakes to your preferred spice level. These rolls are best served warm.
