  • 2 cups Granulated sugar (400g)
  • 2 Large eggs
  • 15 ounces Whole milk ricotta cheese (425g)
  • 2 tablespoons Lemon zest
  • 1/4 cup Fresh lemon juice (60ml)
  • 3 cups All-purpose flour (360g)
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt

  • 2 cups Powdered sugar (240g)
  • 4 tablespoons Fresh lemon juice

  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, then mix in the ricotta cheese, lemon zest, and lemon juice until well combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Cover the dough and chill it for at least 30 minutes in the refrigerator to prevent spreading.
  • Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  • Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake for 8-10 minutes, or until the edges are lightly golden and the centers are set. Cool on baking sheets for a few minutes before transferring to a wire rack.
  • While cookies cool, whisk together the powdered sugar and lemon juice for the glaze in a small bowl until smooth.
  • Once cookies are completely cool, dip the tops into the lemon glaze, or drizzle the glaze over them. Let the glaze set before serving.
