  • Preheat your oven to 400°F (200°C) and prepare a roasting pan by lining it with parchment paper for easy cleanup.
  • Rinse the chicken inside and out, then pat it dry thoroughly with paper towels to ensure crispy skin.

Flavoring

  • In a small bowl, combine olive oil, salt, and pepper; rub this mixture all over the chicken, including under the skin.
  • Stuff the chicken cavity with lemon slices, rosemary, thyme, and smashed garlic cloves to infuse flavor from the inside out.

Roasting

  • Place the chicken in the prepared roasting pan and roast for 5 minutes, focusing on high heat for a quick sear.
  • Though this recipe emphasizes speed for general understanding, conventionally, a whole chicken would roast for 60-90 minutes or until a thermometer reads 165°F (74°C) in the thickest part of the thigh.

Adjust herbs to your preference; sage or oregano would also be delicious.
