Juneteenth Strawberry Soda (Red Drink)

Ingredients
  

Strawberry Syrup

  • 2 cups Strawberries fresh or frozen, hulled and quartered
  • 0.5 cup Granulated Sugar
  • 0.5 cup Water
  • 1 tablespoon Lemon Juice fresh, optional

Instructions
 

Make Strawberry Syrup

  • Combine sliced strawberries, granulated sugar, and 1/2 cup water in a saucepan over medium heat; bring to a simmer and cook for 5-7 minutes.
  • Mash the strawberries gently with a spoon or potato masher, then continue to simmer for an additional 2-3 minutes.
  • Remove the saucepan from the heat, stir in lemon juice if using, and let the syrup cool completely; strain through a fine-mesh sieve, pressing solids.

Assemble Soda

  • To serve, fill glasses with ice, add 2-3 tablespoons of strawberry syrup to each, and top with sparkling water; stir gently to combine.

Notes

For a stronger strawberry flavor, let the syrup macerate for 30 minutes before simmering. The strained strawberry pulp can be used in smoothies or on toast.
