Meatloaf

  • 2 lbs ground beef (80/20)
  • 2 large eggs
  • 1/2 cup milk
  • 1 cup bread crumbs
  • 1 yellow onion, diced finely

Seasoning

  • 1/2 cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Glaze

  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.
  • In a large bowl, gently combine the ground beef, eggs, milk, bread crumbs, and diced onion.

Seasoning & Forming

  • Add ketchup, Worcestershire sauce, garlic powder, dried thyme, salt, and black pepper to the meat mixture; mix until just combined.
  • Transfer the mixture to the prepared loaf pan and gently form it into a loaf shape.

Glaze & Baking

  • In a small bowl, whisk together the ketchup, brown sugar, and Dijon mustard for the glaze.
  • Spread the glaze evenly over the top of the meatloaf and bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).

Resting & Serving

  • Remove the meatloaf from the oven and let it rest for 10 minutes before slicing and serving.

Notes

Do not overmix the meatloaf mixture, as this can lead to a tough texture. For a richer flavor, consider adding a tablespoon of finely chopped fresh parsley or chives. Always use a meat thermometer to ensure the meatloaf is cooked to a safe internal temperature. Allow the meatloaf to rest to redistribute juices, resulting in a more tender and moist slice.
