  • 1 (3-4 lb) Whole chicken
  • 2 tsp Salt
  • 1 tsp Black pepper
  • 2 tbsp Olive oil
  • 3-4 Rosemary sprigs

Preparation

  • Preheat your oven to 400°F (200°C) and prepare a roasting pan by placing a rack inside.
  • Remove the chicken from its packaging, pat it dry with paper towels, and season generously with salt and pepper.
  • Drizzle the chicken with olive oil, ensuring it's evenly coated, then place the rosemary sprigs inside the chicken cavity.

Roasting

  • Place the chicken on the rack in the roasting pan, breast-side up.
  • Roast for 60-90 minutes, or until a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C).
  • Allow the chicken to rest for 10-15 minutes before carving to keep it juicy.

Notes

For extra crispy skin, try basting the chicken occasionally with its own juices during the last 30 minutes of roasting.
