Preparation

  • Remove giblets and neck from the turkey, rinse thoroughly, and pat dry.
  • Submerge the turkey in the prepared brine solution and refrigerate for 12-24 hours.
  • Preheat your smoker to 225-250°F (107-121°C) using your preferred wood chips.
  • Remove turkey from brine, pat dry, apply butter and seasoning rub generously, and truss the legs.
  • Place the turkey in the smoker and cook until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
  • Remove the turkey from the smoker, tent with foil, and let it rest for at least 30 minutes before carving.
