  • 1 tablespoon butter
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 celery stalks, chopped
  • 1 (28 ounce) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 1 tablespoon Old Bay seasoning
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 pound crabmeat, drained and flaked
  • 0.5 cup heavy cream
  • 0.25 cup fresh parsley, chopped
  • Salt to taste
  • Black pepper to taste
  • 0.5 teaspoon Hot sauce (optional)
  • Lemon wedges for serving

Cooking Steps

  • Melt butter in a large pot over medium heat, then add onion and cook until softened, about 5 minutes.
  • Stir in garlic and celery, cooking for another 2 minutes until fragrant.
  • Pour in diced tomatoes, chicken broth, Old Bay seasoning, thyme, and bay leaf, then bring the mixture to a simmer.
  • Reduce heat to low and stir in crabmeat and heavy cream, cooking for 2-3 minutes until heated through.
  • Remove the bay leaf, then stir in fresh parsley and season with salt, pepper, and hot sauce if desired.

Notes

For extra flavor, you can add a pinch of smoked paprika. Serve immediately with crusty bread or rice for a complete meal. This stew can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm on the stove over low heat.
