Crust

  • 1 cup graham cracker crumbs

  • 2 tbsp sugar

  • 24 oz cream cheese, softened
  • 15 oz canned pumpkin puree
  • 1 cup sugar
  • 3 eggs

  • 1/2 tsp ginger

Preparation

  • Preheat the oven to 350°F (175°C). Lightly grease a 9-inch springform pan.
  • Prepare the crust by combining graham cracker crumbs, melted butter, and sugar in a bowl. Press the mixture firmly into the bottom of the prepared springform pan.

Cheesecake Filling

  • In a large bowl, beat the softened cream cheese until smooth. Add the pumpkin puree, sugar, cinnamon, nutmeg, and ginger, mixing until well combined. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.

Baking

  • Pour the cheesecake filling over the crust in the springform pan. Bake for 50-60 minutes, or until the edges are set but the center still jiggles slightly. Once baked, turn off the oven and leave the cheesecake inside with the door ajar for an hour to cool slowly and prevent cracking.

Chilling and Serving

  • Remove the cheesecake from the oven and let it cool completely on a wire rack. Once cool, refrigerate for at least 4 hours, or preferably overnight, to allow it to set fully. Serve chilled, optionally topped with whipped cream and caramel sauce.

Notes
