  • 2 lbs potatoes Russet or Yukon Gold recommended
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Wash the potatoes thoroughly, then cut them lengthwise into even wedges. Aim for about 8 wedges per potato.
  • In a large bowl, whisk together the olive oil, garlic powder, dried parsley, salt, and black pepper.

Baking

  • Add the potato wedges to the bowl with the oil mixture and toss until they are evenly coated.
  • Arrange the coated potato wedges in a single layer on the prepared baking sheet, ensuring they don't overlap.
  • Bake for 20 minutes, then flip the wedges and sprinkle them evenly with the grated Parmesan cheese.
  • Return to the oven and bake for another 10-15 minutes, or until the wedges are golden brown and crispy.

Serving

  • Serve the baked garlic parmesan potato wedges immediately as a delicious side dish or snack.

Notes

For extra crispiness, soak the cut potato wedges in cold water for 30 minutes before tossing with the oil mixture and pat them very dry.
